Cut chicken thighs into small cubes.
To marinate the chicken, add 1 tsp of shredded ginger, 1/2 tsp of black pepper, ½ tsp of onion powder, 1 tsp of soy sauce. Mix well. Then add 1 tbsp of vegetable oil and mix it again.
While the chicken is marinating, cut 1 yellow bell pepper and 1 onion into strips.
For the lemon pepper stir-fried sauce: Add 2 tsp of lemon juice and some lemon zest, 1 tsp of sugar, 1 tsp of black pepper, half tsp of onion powder, 2 tbsp of minced garlic, 1 tsp of oyster sauce, 1 tsp of soy sauce, ¼ tsp of salt, 1 tbsp of corn starch. At last, we are going to add 4 tbsp of water and mix well.
Heat up a pan at high heat. Add 1 tbsp of oil and chicken into the pan. Once the chicken is fully cooked, take it out from the pan and leave it on a plate for later use.
In the same pan, saute the bell pepper and onion at high heat for about 30 seconds. Add chicken and the lemon pepper sauce in, stir well with the veggies.
At the end, garnish with some lemon slices. Enjoy!
