Place the ribs in a pot with 2 slice of ginger, add cold water cover them, and bring to boil. Take the ribs out when the water is boiling. This step can make the sauce cleaner.
In a dutch oven, heat 1 tbsp of oil with medium heat. Sautee garlic, ginger, star anise, and cinnamon stick for about 1 minute. Once you can smell the aroma of spices, add the can tomato in, together with soy sauce and 1 tbsp of sugar.
Add ribs into the sauce, and add water to cover the ribs. Once the water boil, turn to low heat and let it stew for 2 hours. Enjoy!
