How to braise chicken wings using coke and soy sauce?

  1. Break down the whole chicken wing into 3 parts

Find out the joint where the wing bends, and it will be easy to cut through the connection point easily

  2. Score wings

So that the wings can easier absorb the flavor from the sauce later

  3. Simmer wings**

Leave the wings in a saucepan. Add boiling water into the pan

  4. Prepare sauce

For 5 lb. of wings, here we use 0.5 cups of soy sauce and 1 cup of coke. You can adjust the quantity of coke and soy sauce based on how many wings you have

  5. Prepare other ingredients

Chop some garlic, gingers, and spring onions

  6. Heat a pan, add oil

Then slightly fried garlic, ginger, and spring onion. This step will bring richer flavor to the wing sauce

  7. Add chicken wings

After draining out the water, add chicken wings into the pan, and stir-fried for a little bit

  8. Add sauce to the wings

Once the sauce starts boiling in the pan, turn to medium heat and let the wings cook and absorb the flavor of the sauce, cover the pan. Cook for 15 – 20 minutes

  9. Let the sauce reduce

15 minutes later, take the cover off and turn up the heat. Stir and let the sauce reduce. At this point, you can taste to see if the sauce is salty enough. Or even take one of the wings to taste. The longer you cook, the sauce will reduce more and more and will become saltier. You can stop cooking at any point when feel the flavor is right

  10. Garnish with spring onions (optional)

Tips:
* About coke: here we were using zero coke, you can also use regular coke or diet coke. The difference is, normal coke will be sweeter as it contains more sugar, so at the end when the sauce is reducing, you need to be careful that the sauce doesn’t burn
And of course, it will be the same for Pepsi
** simmer the wings: hot water will help render some of the excess fat in the skin. These additional steps will lower the calories. Also for the taste, it will help eliminate the smell, blood in the raw chicken wings, and it will make the final dish taste better.
